It can be done today, it's just well hidden: long press the clock, go to Clock style, and pick one of the styles whose preview shows no time. The date, battery and weather row stays, only the clock itself goes away.
If you'd rather have the space back completely, you can replace the clock with a widget of your choice instead. The steps are in Custom clock: add a custom widget under Niagara settings > Features > Niagara Widget, then long press it on the home screen and tap "Replace clock with widget".

A plain on/off switch for the clock is still an open request, so if that's what you're after, upvoting is the way to push it: Add the ability to switch off the built-in clock.
